Ingredients:
- 1 lb. Italian Sausage: The recipe suggests using hot sausage for extra spice, but you can substitute with your preferred type of meat.
- 20 oz. Frozen Three-Cheese Tortellini: It’s recommended to buy the kind from the specialty refrigerated case in the deli area of the grocery store.
- 32 oz. Low Sodium Chicken Broth
- 2 Cans Diced Tomatoes: These should be seasoned with basil, garlic, and oregano. If unseasoned, you’ll need to add your own spices.
- 8 oz. Cream Cheese or Neufchâtel Cheese: The recipe uses the low-fat version.
- Grated Parmesan Cheese: For topping, not pictured in the recipe.
Steps:
- Prep the Cheese: Remove the cream cheese or Neufchâtel from the fridge to let it soften.
- Combine Ingredients: Brown the meat if desired, then add the sausage and tortellini to your Crock Pot. Pour the tomatoes (with their liquid) and broth over the top. Add the cream cheese in chunks.
- Stir and Cook: Stir everything to ensure even distribution and that the liquids cover the tortellini. Cook on LOW for 3 1/2 to 4 hours. Stir after 1 1/2 hours and again at 3 hours. For the last 30 minutes of cooking, remove the lid to help the sauce thicken.
